Easy Homemade Macaroni and Cheese

teaspoon freshly grated nutmeg
- 1/8
teaspoon freshly ground black pepper

teaspoon cayenne pepper

cups (about 9 ounces) grated sharp yellow or white cheddar
- 3/4
cup grated Gruyere, or pecorino Romano, or Parmesan
- 1/2
